Protein tapioca with honey & cardamom

As a dessert or snack, tapioca is a great option! If you've never tasted tapioca pearls, just one taste is enough to hook you for life. Tapioca pearls are small, translucent edible spheres produced from tapioca, a starch extracted from cassava root. Ingredients

  • 810 ml (3¼ cups) Natrel Plus 3.25%
  • 5 ml (1 tsp) vanilla extract
  • 5 ml (1 tsp) cardamom
  • 1 pinch of salt
  • 125 ml (1/2 cup) tapioca beads (small or medium)
  • 2 egg yolks
  • 75 ml (⅓ cup) honey

  • Fresh or dried fruit
  • Homemade or commercial jam

Preparation

In a water bath, heat Natrel Plus 3.25% with the vanilla extract, salt and cardamom.

Add the tapioca pearls. Cook over low heat, stirring regularly until the tapioca becomes transparent (about 40 minutes).

In a bowl, combine the egg yolks and honey. Add some hot tapioca. Mix.

Pour the preparation into the water bath, stirring until thickened.

Pour into a bowl and cover with plastic wrap.

Let cool, then refrigerate for about two hours.

Top with granola, fresh fruit or homemade jam. Finish with a drizzle of honey.
